Stuffed Peppers by Sarahbear

Cook a pot of rice, white or brown, 4 servings and cook with directions on the box/bag.
Brown a package of sausage in a pan. I use Jimmy Dean sausage rolls, but you can substitute your own brand and flavor. Once you’ve got most of it done add in half of a chopped Vidalia onion and 1/4 cup brown sugar.
Once the onions and sugar have had a chance to mingle with the delicious sausage add a dash of soy sauce and 1/4 cup ketchup. Once that’s mixed together move the mixture to a large bowl. Add rice and stir until it’s mixed well. Add 4 oz cream cheese to hold the mixture together.
Cut the tops off of 4 large bell peppers and stuff them with as much of the sausage and rice as they can hold. Rub a little olive oil on the outsides of the peppers to help roast the skin a bit and pop them into the oven at 375 for about a half an hour (or until the peppers are cooked soft enough for your liking).
Delicious!

The recipe for the rice and sausage is pretty sweet so I prefer green peppers to tone it down a bit and more flavor.
