Sometimes you find yourself between paychecks and have to make due with what’s left in the fridge. That’s how Chad came up with this particular meal. He’s great at throwing stuff together when I run out of ideas.

Sausage & Bean Tacos:

2 links of Georgia Boy Smoked Sausage (or a similar sausage of your choice)

1 can of Bush’s Grillin’ Beans Black Bean Fiesta

Brown Rice (enough to feed your family)

Tortillas and/or Taco Shells

Chili Powder, Cayenne Pepper and other spices to suit your taste

Lettuce, Tomato, Sour Cream, Salsa etc. Whatever else you enjoy on your tacos.

Start some water for your rice or start your rice cooker. Slice sausage links, then quarter each slice. Toss them into a pan and brown them a bit. Once they’re cooked a bit, add the can of beans to the pan and the spices you think you might need and just let it simmer for a while. Don’t forget to heat up your tortillas or taco shells in the oven!

It's ready!

As soon as your rice is done, put a couple of tablespoons onto your tortilla/taco. Add the sausage and beans. Then top with lettuce, tomato, cheese, sour cream, etc.

We’ve kind of made this a regular recipe for nights where we don’t feel like doing anything elaborate for dinner. It tastes just as awesome when you use chicken instead of sausage, or you can even add chicken in with the sausage. We’ve done both. You could exclude the meat all together if you wanted to make it vegetarian. It’s a nice change up from typical fajitas or tacos. Everything on my plate was around 530 calories, so it fit in well with my calorie goals and weight loss program. You could even cut back more by using low fat cheese and sour cream or making the beans from scratch. Just cut up fresh peppers, corn and add spices to taste.
